Nothing beats a warming cup of hot chocolate with a biscuit – and here is an amazing and delicious sugar free, dairy free, gluten free, no guilt healthy version for you to enjoy as the weather starts to turn colder!

This was sent to us by one of our customers, Jen who makes some amazing things!

First make tiger nut milk, or horchata using our recipe (200g tiger nuts, soak, drain, blend with 800mls water and strain – see earlier horchata post), and then mix it with some raw cacao powder, cinnamon and lucuma powder to taste before heating gently.  Raw cacao is unprocessed chocolate which has an intense chocolate taste and is incredibly good for you. It contains vitamins and minerals and is said to  improve digestion, promote wellbeing and lift your mood! Its intense taste can be bitter, and using an alternative sweetener like Lucuma keeps this recipe indulgent and healthy. Lucuma powder is made from a bright yellow found in Peru, and has a sweet fruity caramel taste.

Once you have made the tiger nut milk you’ll have left over pulp which is really tasty, nutritious and high in fibre. Do not discard! This simple recipe makes really good use of all the leftover goodness!

Ingredients

1/2 cup ground almonds,

1/2 cup left over tiger nut pulp,

1/2 cup soaked and drained medjool dates and goji berries (ratio ~3:1),

2 tbsp raw cacao powder,

1 tsp coconut oil ,

1/2 tsp vanilla essence,

pinch cinnamon, pinch salt.

Add 2 tbsp cacao nibs if you want some crunch!

Method .

Just mix in food processor or blender

 Roll into small balls and press into biscuit shapes.

Bake in preheated oven for ~20 mins. Enjoy!
