It feels like spring and we love this pretty pink smoothie bowl! It’s created by our favourite medicinal chef and nutritionist Alessandra Felice from Sweet Nutrition.
Alessandra is passionate about food and loves creating recipes that are healthy, healing and delicious, particularly deserts. Alessandra is a holistic nutritional therapist and also teaches private and group medicinal cooking classes, and she has kindly shared her recipe for this delicious vanilla latte potion, full of creamy goodness and topped with cinnamon cookie dough truffles, a creamy cuddle in a bowl!
To prep the smoothie, blend
1 cup steamed and frozen cauliflower
1 1/4-1 1/2 cups of warm hazelnut/cashew or tiger nut milk (depending on how thick you’d like your smoothie to be)
1 scoop of @formnutrition vanilla plant powered protein
1 t of vanilla and 1/2 t of cinnamon
1 T of tahini or cashew/hazelnut butter
optional, 1 teaspoon of maca to add a slight caramel flavour
A couple of tbsp of @coyo_uk vanilla coconut yogurt
For the super easy cookie dough truffles, mix
1 cup tiger nut flour
1/4 cup of the vanilla protein powder
1 to 1 1/2 tsp of cinnamon
pinch of salt
1/2 tsp of vanilla
1/4 cup of @mindfulbitesuk maca & almond nut butter
1/4 cup of soft dried apricots ( or dates)
Blend all the ingredients in a food processor, scoop out the dough a tbsp at a time and roll into balls. You could leave them as they are or coat with some coconut flour or even a cinnamon and cacao powder mix. You could also add some cacao nibs in the dough for a chocolate chip cookie dough😍
