Tiger Nut, Lemon & Blueberry Cheesecake
Recipe (adapted from Emily Von Euw ‘s Lemon Dream Pie)

Process the tiger nuts and oats (if using) or flour until they look like breadcrumbs. Then add the dates and process until it forms a dough, sticking together when pressed. Press into the bottom of a pie dish, and put in the fridge.
Then blend all the ingredients for the filling, until smooth and taste, adjust if necessary. The mixture should look like fudge, if it looks too runny add some tiger nut flour. Spread evenly over crust, and place back in fridge for a few minutes.
Then mix the coconut cream (you can buy this in a carton or place a can of coconut milk in fridge overnight and scoop the top off ). Mix with a little maple syrup and vanilla powder, and spread over the top of the cake. Decorate with anything you like and enjoy!

For this I juiced a head of celery, added two spoons of Tiger Nut flour and a spoon of my favourite Morning Elixir from Alchemy Superblends which contains wheatgrass, spirulina and chlorella all of which make this a great juice for cleansing and detoxing.
Eva came along to our Tiger Nut Tasters workshop and has become a huge fan of our tiger nuts. On her blog she highlights the health benefits of horchata which is rich in minerals and vitamins, especially in calcium, iron, phosphorous, potassium and vitamins C and E. Eva also explains that Tiger nuts are a nutrient dense resistant starch; Resistant starch is a type of starch that is not digested in the stomach or small intestine, reaching the colon intact – it “resists” digestion. Eva explains that this is why we do not see spikes in either blood glucose or insulin after eating RS, and why we do not obtain significant calories from RS. Resistant starch stimulates the good bacteria in our intestines, helping to maintain a healthy balance of bacteria. This makes tiger nut milk ideal for people with diabetes, or those who are struggling with blood sugar issues. Most of all though we still think that one of the main benefits of tiger nut is that it is delicious!

They are tarty because they are made using golden berries* which have a sweet/tart flavour, giving these treats a sharp citrus taste, and ‘tarty’ because they are over-made-up with cinnamon-flavoured raw cacao powder! Created by the lovely Chris from Pears not Parsnips , which is a new healthy eating and juicing blog – we think this recipe is brilliant! Recipe
1 cup tiger nut pulp
1/2 cup raisins
1/2 Cup @therawchocolatecompany Goji Berries and Golden Berries in a ratio of 2:1 moistened with water
1 Tsp Coconut Oil or Cacao Butter
Raw Cacao Powder mixed with sprinkling of Cinnamon for dusting.
Process all ingredients except Cacao Powder until it is blended enough to stick together when pressed.
Shape into balls. Cover in Cacao and Cinnamon Powder.
Refrigerate for a while then enjoy!
