This must be one of the best smoothies ever created ! I’d bought an apple pie flavour raw bar, and although it was really nice I was a bit disappointed as it seemed to taste more of apple and less of pie. Since eating GF I miss the taste of pastry and so I thought I’d have a go at recreating the taste in a healthy smoothie. It took me a few weeks to get it right, and before posting this I tested a batch on a group of friends who all agreed not only that it is delicious, but also that it actually does taste like pie ! The flour and almond butter combined seem to be what gives it a hit of pastry like taste. It will still taste great without these two ingredients but it wont taste apple pie. 400 mls horchata (http://www.thetigernutcompany.co.uk/best-ever-creamy-horchata-recipe/)
4 tbsp Tiger Nut Flour (or Milled)
1 generous tsp almond butter (I used this one from Meridian http://www.meridianfoods.co.uk/Products/Speciality-Nut-Butters/Organic/Almond-Butter-Smooth-100)
large pinch cinnamon
large pinch nutmeg (fresh grated is always best)
1 banana
Juice two of the apples. Then place juice and horchata in a blender, cut up and add the remaining apple and blend. Then add the remaining ingredients and blend until smooth.
I served mine topped with Tiger Nut Flour, a slice of apple and a sprinkle of chia seeds – enjoy !
