I’ve been testing (and tasting) this Tiger Nut Acai Bounty Bites recipe today, ready for the Against the Grain festival in Camden Market,  where we will be doing a demo on Sunday at 2.30pm with the lovely crew from OTE Superfoods. I developed this recipe using their lovely products to create a delicious, super healthy cake. These cute little bites  easy to make, super healthy and full of goodness, a guilt free treat!

Eating nutrient dense foods can help improve your health and vitality. In this recipe we’ve included Acai powder, which is great for helping your skin to glow. It is also full of anti-oxidants and Vitamin C. Tiger Nuts are full of fibre and are are incredibly high in Vitamin E. For this recipe you can easily make tiger nut milk yourself by soaking and straining tiger nuts, or use our ready made Tiger Nut milk as we did here.  We’ve used raw cacao and Yakon, a super sweetener that is rich in antioxidants. Tiger Nuts and Yakon are also both natural sources of pre-biotics which help nourish your gut flora. Base
100g Tiger Nut Co flour 100g gluten free oats
1 tbsp raw cacao powder
2 tbsp coconut oil
2 tbsp OTE Yakon syrup
3 tbsp Amandin tiger nut milkCoconut layer
1 tsp OTE acai powder300g dessicated coconut
4 tbsp tiger nut milk
2 tbsp coconut oil
3 tbsp Yakon syrup

1tsp OTE acai powder

1 teaspoon OTE raw beetroot powder

Chocolate topping

1 tbsp coconut oil
4 tsp cacao powder
6 tsp Yakon syrup

Line a square cake tin. Process the base ingredients until it forms a rough dough. Press firmly into the cake tin and refrigerate. Rinse the processor before adding the coconut layer ingredients and process until it forms a rough paste. Taste and adjust sweetness if necessary.  Press on top of base layer and freeze. Gently melt the topping ingredients, then pour over the coconut layer, rotating the tin so it gets in all the corners. Place back into the fridge or freezer. Cut into small squares and enjoy!
