I just have to share this with you all! I am passionate about nutrition and this is one of my favourite go-to breakfasts partly because it is quick and simple, but also because it is packed full of antioxidants, good fats, vitamin E for skin and prebiotic goodness for good gut health. I admit it isn’t the best picture I’ve taken, (and I may have even taken a bite before the shot !!) but it truly is creamy, filling, and too simple for words!
Simply take half an avocado, sprinkle with apple cider vinegar, sea salt and Tiger Nuts Crunch – and that is it! I promise the mix of creamy avocado, crunch and salt and vinegar is divine! The fibre and good fats will keep you feeling full and will feed your skin and boost your digestive system.
If you don’t have apple cider vinegar you can use another type of vinegar, but you will lose the benefit of the health-promoting probiotics and enzymes contained in the apple cider vinegar. Apple cider vinegar has been proven to balance blood sugar, boost weight loss and boost gut health – a great addition to your breakfast in the morning.
Avocado’s health benefits for heart, skin, and overall health are well known, and they are a great choice for breakfast, one study showed that after eating half an avocado the desire to eat between meals was reduced by 40%.
Adding Tiger Nuts Crunch adds taste and nutritional value. For example, about 25g adds roughly;2 grams of protein.

They also have around 7g of monounsaturated fat most of which is oleic acid, an important health-promoting fat that research shows can help reduce appetite and promote weight loss. Adding tiger nuts will also help keep you feeling full. To compare a serving of almonds has roughly 40% more calories and a third of the fibre of tiger nuts.
I like to have a glass of fresh vegetable juice for breakfast. This juice has apple, beetroot, celery, ginger and lemon – beetroots are known to be good for building your blood. Beetroot juice contains high amounts of iron that helps regenerate and reactivate red blood cells, which supply fresh oxygen to the body.So all in all this is a true powerhouse of a breakfast, packed full of superfood goodness which will keep you feeling full, full of energy and firing on all cylinders all morning!
