Breakfast can be tricky when you are eating wheat or gluten free, and I often have a juice or smoothie. But on Monday I was inspired by a photo of a dragon fruit breakfast bowl posted on twitter (do check out this blog, it has some great recipes, plantbased-pixie.com) and I thought I’d have a go. I was delighted with what I managed to create in just a few minutes . I just used what I had to hand, which proves you can have a healthy and gorgeous breakfast when you only have a few minutes to spare. The cinnamon seemed to bring out the flavours, while the Tiger Nuts added a sweet crunchy coconut spin to the plate. Obviously this can be assembled quickly with any fruit and any ingredients you like, but taking time to arrange it nicely on a plate does IMO make a world of difference to the taste and eating experience – try it and see !
I used;
a couple of strawberries
1/2 pear
1/2 banana
handful of oats
handful of chopped Tiger Nuts (I used Organic and Premium)
a couple of spoonfuls of fat free bio yogurt
sprinkled with cinnamon, chai seeds and corn flower petals
