Who doesn’t love pancakes! We promise these tiger nut pancakes are delicious and great for breakfast or desert. They are healthy, high fibre, gluten free, , sugar free and easy to make. Delicious with any topping, for an extra warming winter treat try serving with yogurt, and fresh berries warmed through with a little maple syrup and cinnamon.
Ingredients
50g tiger nut flour or powder
2 eggs
a little tiger nut milk (or any milk will do)
1/2 tsp baking powder
1/2 teaspoon vanilla powder or essence (optional)
pinch black pepper
pinch cinnamon
fruit and yogurt or cream for topping
Method
Whisk the eggs. Combine with remaining ingredients, and whisk until you have a smooth batter with no lumps.
Heat a little oil in a non stick pan. Add a ladle of the batter, smooth down if necessary and cook for a couple of minutes
Then carefully flip and cook on other side until cooked through (another 2 mins)
Keep warm while you cook the remainder of the batter
Serve with thick greek yogurt or cream, and fresh fruit.
